ECUADOR FOOD

Despite being a small country, the cuisine of Ecuador is varied, this is because within the country are four natural regions (coast, sierra, eastern and insular region) which have different customs and traditions. Based on country's natural regions are divided different main dishes and ingredients.

Ingredients
Fish
The fish is usually eaten on the Ecuadorian coast is obtained from the Pacific Ocean or laugh countless waterways in the area. Between main fish are the billfish, albacore, gold camotillo, Chame, croaker and trout. Some of the popular dishes with fish are, seafood soup, Fish ceviche, corviches, muffins, casseroles, fish stew with peanuts, etc encocado. A plate typical coastal fish called Onions.

Banana
Ecuador is a strong exporter of bananas, so it represents an important element in the food, especially in the Ecuadorian coast. There are three main varieties of bananas, with the three most important: the green banana, plantain ripe bananas. The green plantain is usually eaten fried, roasted or boiled. Usually eaten ripe banana fried, roasted or boiled in the same way, it tastes sweeter and softer consistency and "banana" usually eaten raw as a fruit either, but there are a plethora of desserts prepared on the basis of bananas.

Vegetables and legumes
The vegetables are present in different forms, rice, green or ripe plantains, cassava, or sauce groundnuts (peanuts) roasted and ground. Maize is usually popular food in corn tortillas known as bonitísimas, cook the corn (corn) in water and salt, porridges and eaten with cheese. Same beans, which accompany many of their dishes. The Mashed potatoes or serve as a base for dishes such as llapingachos which are potato pancakes or Stews.

Meat
It is usually eaten beef, lamb and goat. Some dishes are combined with vegetables such as dry are chunks of meat served with rice. Among the dishes Exotic is the guinea pig, which is usually eaten roasted in the celebrations of certain parts of the country. Meat pork (pig, piglet, puppy) is eaten in several parts of the country, participates in developing different dishes, some of them as fried, baked, chugchucaras. It is noteworthy Ecuador's kitchen wines (Known as soups, Stews) that are usually prepared a variety of vegetables and chicken meat are often served as street markets breakfast. Some of them are very popular as yaguarlocro which is a potato soup that takes as ingredient lamb and a special sauce that visiting Ecuador will know the taste.
